The dish we serve last is often the most important and it’s dessert. After a full Christmas meal, everyone says, ‘That was good, but I’m full!‘ and yet we all somehow have a secret pocket of space reserved just for the dessert. That’s where this No Bake Nutella Cream Cheese Mousse charms it’s way.
It’s decadent yet light, a mousse that tastes similar to Ferrero Rocher with bursts of fresh, slightly tangy raspberries in every bite. And don’t look at the 2 hours and run away, that’s just the chilling time. The actual hands-on work takes only about 20 minutes! Even better, you can make it a day in advance, pop it in the fridge, forget about it until the next day, then get it ready 5–10 minutes before serving (depending on how many guests you have). It’s an effortless, classy dessert to end the Christmas night with.
Now, a little backstory. I was racking my brain trying to come up with an easy, simple, but still elegant dessert for my Christmas lineup when, one rainy afternoon, my husband and I found ourselves in Amersfoort which is a city in the Netherlands. Based on recommendations from people we knew, we visited a café called Dolle Diva (highly recommend it if you ever visit Amersfoort! I’ll spare you my long descriptions, just Google it, you won’t be disappointed). I ordered a dessert that inspired this recipe. It was amazing, and I knew right then I had to recreate something similar for this year’s Christmas menu.
So there ya go! No Bake Nutella Cream Cheese Mousse
Ingredients
Nutella Cream Cheese Mousse
- 140 g Nutella
- 120 ml Heavy Cream 35% Fat
- 2 g Gelatin Sheets
- 180 g cream Cheese
- 1 tsp Vanilla Extract
Toppings
- Fresh Raspberries
- Whole Hazelnuts roasted
- Powdered Sugar for dusting
Instructions
- Begin by blooming the gelatin sheets: place them in a small bowl with cold water and let them sit for 5 minutes. In another bowl, add the Nutella and set it aside.
- Heat the heavy cream in a small saucepan over medium heat, making sure it doesn’t come to a boil, you should see steam and small bubbles around the edges of the pan. Lower the heat, drain excess water from the gelatin sheets, and add it to the heavy cream directly and whisk it until fully dissolved.
- Remove the saucepan from the heat and pour the warm cream over the Nutella, letting it sit for 3 minutes.
- In a separate bowl, whip the cream cheese with the vanilla extract using a hand mixer or stand mixer for about 1 minute, then set it aside. Whisk the Nutella and cream mixture until smooth, then add it to the whipped cream cheese. Mix everything together using the mixer, scraping down the sides and bottom as you go to ensure everything is well combined.
- Pour the mixture into your chosen molds or serving glasses/bowls and refrigerate for at least 2 hours, or overnight if preparing ahead.
- When ready to serve, remove the mousse from the fridge, top it with fresh raspberries and roasted hazelnuts, and dust with powdered sugar right before serving. Enjoy!
