In my previous post (The Everything Salad), I confessed how bad I used to be at making salads. I was definitely not the go-to person for a good salad. But I think I’m slowly shedding that reputation (at least, I hope so!). This salad was my first step toward becoming better at salads. When I first tried my hand at making salads, I struggled a lot. My main issue was fear of making mistakes because with raw ingredients, there’s nowhere to hide. I didn’t know which flavours would work well together, especially when it came to creating vinaigrettes/dressings. But as I practiced more of my cooking skills, I began to understand how flavours interacted. That’s when this Apple Arugula Sumac Salad came to me. For a whole year, this was my go-to salad whenever I needed a quick and simple salad side dish. I’d mix it up by adding different ingredients each time, but the dressing always stayed the same. It’s super easy, fuss-free, and only takes 10 minutes to make.

Apple Arugula Sumac Salad
Ingredients
- 150 g Arugula
- 1 Red Onion thinly sliced
- 1 Red Apple peeled, cored and thinly sliced
- 1½ tsp Sumac
Vinaigrette
- 20 ml Olive Oil
- 2 tsp Honey
- 10 ml Lemon Juice
- 1 tsp Whole Grain/Dijon Mustard
Instructions
- In a small mason jar, combine all the vinaigrette ingredients. Secure the lid tightly and shake vigorously until well mixed.
- In a large bowl, add the arugula, thinly sliced onion, apple, sumac and vinaigrette. Toss everything together until evenly coated. Optionally, top with croutons.
